How often have you been caught out, while frying with oil?  You realise that you need more oil while the food is cooking.  What happens when you add cold oil to a hot pan?  The food doesn’t cook properly, as the heat of the oil isn’t sufficient and worse still, it can make the outer layer of the food soggy!

There is a simple solution to this, particularly when sautéing – add oil in a trickle, along the edges of the pan.  By the time the oil reaches the food being cooked, it will be heated.  Job done!
