Have you ever wished you could find that perfect, healthy alternative to cream cheese or sugar frosting? But there’s only so much you can change right? Full-fat to low fat cream cheese, but that makes the icing sloppy or reduce a bit of sugar out of guilt, but then that affects the taste. You could substitute for icing sugar and water, but that still isn’t really there when it comes to frosting is it? Why substitute or compromise at all, when I have the perfect solution…Also it will appeal to those with allergies to dairy and diabetics as low GI.
Well, let me tell you, there IS an alternative and it’s the form of Italian meringues of all things…It pipes perfectly (providing you use it straight away) and it doesn’t go brittle or harden.
So, with just egg whites, cream or tartar, vanilla extract and xylitol or stevia (sugar alternatives), you can create a low-fat, low carb and natural sugar alternative icing. Who’d know? Just take a look at the picture….with a blow torch, you can even create something more theatrical.
Calorie wise, we’re only talking 60 per cupcake for the icing and the batch is more than enough for 12 cupcakes.
Take a look for yourself at the recipe. It’s really not as complicated as it might sound, if you follow each step. Within 12-15 minutes you will be ready to pipe your very own ‘sugar alternative’ icing.
