  1. Preheat the oven to 180C/160C fan/350F/Gas 4. Grease two baking trays and cover with baking parchment.
  2. Whisk the egg white and almond extract in a bowl, until frothy.
  3. Put the ground almonds and icing sugar in a large bowl and make a well. Add the egg mixture and mix with a metal spoon until the dough is to a soft texture.
  4. Using a teaspoon, scoop out mixture and roll into a ball. Arrange on the baking sheets, spacing them well out, as they will expand during baking. They can be decorated with flaked almonds if you wish.
  5. Bake the biscuits for 15 - 20 minutes; they should be lightly browned. Do not allow to over cook, as they will become too hard to bite into!
  6. Let them cool on a rack.
Recipe Notes

You may bake this in advance and they will happily keep in an airtight container for several days.
