Pudding
  1. Pre-heat the oven to 180C/350F/Gas 4. Grease and oven-proof dish (pyrex is perfect). Meanwhile, combine the dates with the water in a small pot and bring to the boil. Remove from the heat and add the bicarbonate of soda (the mixture will fizz, which is normal).
  2. Cream together the butter, sugar and egg. Sift the flour and baking powder and add to the creamed mixture with the cooled dates and mix well. Mix in the nuts and pour into the greased dish. Bake for an hour, or until the skewer comes out clean.
Syrup
  1. For the syrup, boil the sugar, water and vanilla essence/extract together until the desired syrup consistency is reached. Anything from 2 - 10 minutes. Add the brandy, cinnamon and mix well.
  2. Serve the pudding with the syrup poured over it and top with whipped cream or custard.
