This evening meal idea came about as I wanted to use up a drawer full of greens and had a pack of chicken strips coming to its sell by date.  This dish is so delicious and can be prepared and cooked in under 25 minutes.  The chicken will give you a protein-rich dish and the accompanying greens, apart from full of flavour are high in Vitamins A, B6, C, iron and magnesium.  It is also low calorie.  Each serving is 250 calories.

  1. In a frying pan, sprinkle a teaspoon of fine salt and turn on the heat (medium-high). When the pan feels hot, put in the chicken strips and start to dry-fry. Turning regularly, until both sides have started to brown. You will probably see small deposits on the pan, but don't worry as you will deglaze the pan later.
  2. Meanwhile, put the crushed garlic into a second frying pan and heat the rapeseed oil. Don't allow the garlic to burn as it will become bitter. Then drop in the greens and cook for about 5-7 minutes, until softened. You don't want to overcook, as the lovely green vegetables will start to turn yellow (sign of over-cooking). Now season well and add 1-2 tablespoons of low-fat crème fraîche. If it is too thick, you can add a teaspoon or two of water.
  3. Now deglaze the chicken pan with half a lemon's juice, once absorbed, add the smoked paprika and cook for a further 1-2 minutes. Because the chicken is small, it will cook very quickly and start to dry out if over cooked.
  4. Serve the greens in the middle of the plate and carefully sit the chicken strips on top.
