Instructions
  1. Line a baking tray with parchment paper.
  2. In a saucepan, take the coconut sugar, coconut milk, cocoa powder and coconut oil and slowly bring the ingredients to a low boil, stirring frequently.
  3. When the mixture starts to bubble, let boil for one minute, before removing from the heat. Leave for a minute to cool, before adding the remaining ingredients and mix to ensure they're all incorporated.
  4. Using a tablespoon, drop the mixture onto the baking tray, slightly flatten and keep in a round shape.
  5. Sprinkle with optional salted, crushed peanuts and/or flaked coconut.
  6. Leave the cookies to cool at room temperature for about one hour. Then place in the fridge and leave until serving.
  7. IF there are any leftovers, they will keep fine in the fridge for several days, but leave in an airtight container. They are best eaten fresh though.
