  1. Line a 20cm x 30cm baking tray with baking parchment and preheat the oven to 190C/170C fan/375F/Gas 5.
  2. In a bowl, whisk the eggs, oil and milk together for several minutes, until light and bubbly. Add the sugar and mix well.
  3. Sift the flour/ground almonds, cocoa and baking powder into a bowl. Then fold into the wet mixture. Finely grate the courgettes and stir into the mixture, along with 1 teaspoon of vanilla extract/essence. Spoon into the baking tray and bake for 40 minutes. If the top is colouring too much, place a piece of parchment over the top. It is normal for some cracking to appear.

  4. For the icing; beat the butter, vanilla extract and icing sugar into a bowl. Spread the icing over the top of the cooled cake with a palette knife and finish with a dusting of cacao powder. Cut into slices, remove the tray and serve.

Recipe Notes

This recipe is adapted from Sainsbury's website.

For a true 'free from' cake or healthier version, do not use icing.  Instead, sprinkle lightly with icing sugar.  The nutritional table includes the icing sugar.

If you don't have a baking tray, you can use 2 x 18cm round cake tine.  Just reduce the cooking time to 30 minutes.
