  1. Grate the courgette (medium fine) and then wring out the water with your hands, or wrap in a tea towel and squeeze out the water.
  2. In a large mixing bowl, put the flour and salt. Add the drained courgettes and add the eggs. Mix well to combine. Don't worry if the mixture looks a bit wet.
  3. In a frying pan, put the oil and heat on a medium high heat. Put four large tablespoons of the mixture in and cook until golden brown and then flip over and cook the other side. This should take about 3 - 4 minutes on each side, depending on their size and heat of the pan.
  4. Put on kitchen towel to soak up any excess oil and serve with the chopped spring onions and an option dollop of fat free greek yohurt or sour cream
Recipe Notes

Top tip:  If you want to make the fritters look the same size, load an ice cream scoop with the mixture, then gently pat with a palette knife or back of a spoon.

I like to buy portobello mushrooms and use that as a base for the fritter, a bit like burger and a bun, but the healthy option with the bread.  Tastes particularly good with a dollop of sweet chilli sauce, along with the soured cream or yoghurt.
