  1. Pull off the tough outside leaves of the cabbage and discard. Cut in half and remove the hard inner core. Rinse the leaves and taking 3 or 4 leaves at a time, tightly roll up like a cigar and finely shred. Continue until all the cabbage is in fine 'shards' Cut the carrots finely, or use a grater to shred.
  2. Put on a pan of hot water and add the cabbage and carrots. Boil for 6 minutes, until just soft. Drain and return to the hot pat and add the creme fraiche. Season well with salt and pepper if necessary. Add the nutmeg and stir well. Put in a serving dish and serve immediately.
