We all love a goat's cheese tart. But sometimes goat's cheese and caramelised onion can be rather samey. This variation has real flavour and the addition of the lemon cuts through that sometimes chalky cheese.

  1. Heat the oven to 220C/200C Fan/Gas 7. Put the olive oil in a large frying pan and add the butter. Once to temperature, add the leeks and cook at a medium heat until softened, but do not allow to colour. Stir in the thyme, half the lemon zest and then raise the heat. Add the lemon juice and cook for a further 30 seconds, until the juice reduces and season well. Remove from the heat and allow to cool slightly.
  2. Unroll the pastry and lay on a baking sheet, lined with baking parchment. Lightly mark a 1cm border around each edge with the tip of a sharp knife, then prick the base with a fork.
  3. Spread the leeks over the pastry, remembering to keep the mixture within the marked out edge. Crumble over the cheese, scatter with walnuts and then season with pepper. Drizzle with some olive oil, brushing the edges a little oil too.
  4. Put the tart into the oven for 15-20 minutes, until the pastry has puffed around the edges and looks golden brown. Scatter the tart with parsley and remaining lemon zest. Serve, hot, warm or cold.
