These are like muesli bars and slightly crumblier than buttermilk rusks. You can always swap ingredients for an even healthier version...i.e. replace the butter and sugar for oil and natural sugar alternatives.

Instructions
  1. Preheat your oven to 180C/150C fan/Gas 4. In a bowl, mix the dry ingredients together. Add the melted butter and mix well into the the dry ingredients.
  2. Beat the eggs into the milk and add to the dry ingredients. Mix well until everything is well combined.
  3. Put in a baking tray and bake for 45 minutes.
  4. Leave to cool for at least 10 minutes, before turning out to completely cool (about 30 - 45 minutes). Now cut into pieces (size your choice). Arrange on a wire rack and put back into the oven for drying. This will take anywhere between 6 - 8 hours (best to do overnight), on a low oven 50C-70C.
  5. When cold, store in an airtight container.
