Who can’t resist a flapjack?  That oaty texture and full whack of sugar from brown sugar and golden syrup as a kid has certain comforting memories.  Well, stop a second…Why can’t you still have that, but a healthy version with a twist (without all those empty calories and sugar), but just as tasty. Yes, this contains natural sweetness (low GI) and added crunch from toasted almond flakes, but half the flour and calories of the classic version.  The twist you ask, well that is from banana and dried apricots.

Instructions
  1. Preheat the oven to 180C/160C fan/Gas 4. Grease and line a 20cm x 20cm baking pan with baking parchment paper.
  2. Put all the dry ingredients into a bowl. Now stir in the oil, agave syrup, bananas, apricots, vanilla extract and egg. Mix well until everything is fully coated. Spoon into the baking pan, flatten with a spoon, or spatula, so that the surface is nice and smooth. Bake for 20 - 25 minutes, until the top is golden brown and firmish to the touch.

  3. Cool for 10 minutes, then cut into equal squares (about 16). Leave in the pan to fully cool, before lifting out.

Keep these in an airtight container and use layers of baking parchment, to stop them sticking together.
