This is a real comfort food meal, Chinese style – if there is such a thing.  This is a typical dish you order from your Chinese restaurant, but made simple and quick with the use of a pressure cooker (cooks and keeps the chicken succulent).  Serve with rice for the perfect crowd pleaser.

Instructions
  1. Season the chicken - salt and pepper. Pre-heat the pressure cooker and saute the onion, garlic and chicken in the rapeseed oil. Stir occasionally until the onion is softened, but not browned. Should take about 3 - 5 minutes.
  2. Add the soy, ketchup and pepper flakes and stir to combine. Seal the pressure cooker and cook on high for 3 minutes. When the timer beeps, turn off the pressure cooker and perform a quick pressure release.
  3. Add the sesame oil and honey to the pot and stir to combine. In a small bowl, dissolve the cornflour in water and add to the pot (this will thicken the sauce). Select saute and simmer until the sauce is thick. Stir in the chopped spring onions.
  4. Serve with rice and decorate with the toasted sesame seeds.
Recipe Notes

I have used the Instant Pot pressure cooker.  You can use a traditional pressure cooker.
