  1. Put the cubed potatoes in a large bowl of water and leave for 30 minutes to remove some of the starch (don't worry if you don't have the time to do this; the result will almost be as good!). Drain and dry on a clean tea towel. Preheat the oven to 180C/350F/Gas 4.
  2. Put the potatoes in a large roasting dish and add the garlic cloves and herbs. Squeeze the juice from the lemons over the potatoes, then cut the lemons into quarters and add those to the potatoes too. Drizzle with olive oil and sprinkle with salt and pepper. Toss well to mix.
  3. Transfer the dish to the oven and roast for 20 - 30 minutes, until the potatoes are browned all over. Half way through the cooking time, baste the potatoes, but be careful not to crush them too much. Remove the herbs and lemon quarters before serving.
