Instructions
  1. Pre-heat the oven to 180C/160C fan/Gas 4. Grease and flour a 8.5 inch pie/flan dish.
  2. Peel and core the apples thinly.
  3. Put the eggs, lemon zest, sugar and salt in a bowl and mix until thick and creamy.
  4. Add the flour, baking powder and milk and beat until well combined.
  5. Add two thirds of the apples to the mixture and fold in with a wooden spoon. Tip the batter into the prepared pan/tin.
  6. Arrange the remaining apples on top. Sprinkle with brown sugar (optional).
  7. Bake for 35 minutes, or until a skewer comes out clean. Once cooled, sprinkle with icing sugar.
Recipe Notes

Here I have reduced the calories by using half xylitol and half sugar, but you could go all the way, or even adapt this cake to be "free-from."  This cake is best served warm, but you can leave to cool.  It can be kept covered in the fridge for several days, but preferably don't cook in advance.
