Instructions
  1. Firstly take the tomatoes, make crosses in the skin and then put into a bowl of boiling water for 5 minutes, until the skins start to blister. Remove the tomatoes and put into very cold water. Do not allow for the tomatoes to 'cook' in the hot water.
  2. When you have skinned and finely chopped, put the tomatoes into a bowl, along with all the other chopped ingredients. Add water and then lime juice and salt to taste.
Recipe Notes

Tastes best fresh, but you can cover and keep in the fridge for up to 48 hours.
