The first thing you see about pea soup is the vibrancy of the dish, which is equally matched by the freshness and sweetness that comes through from the peas.  There are few ingredients here, so the peas really do speak for themselves.  If you can make the chicken or vegetable stock, then you will have such a healthy meal.  The small amount of ham and its saltiness really does complement the peas.  All in all, a low calorie, healthy, paleo dish that you will want seconds.  Nicely accompanied with a crusty roll to soak up the leftovers.

Instructions
  1. In a pan, heat the oil, then add the onion and sweat for 4 - 5 minutes, until soft but not coloured. Then add the potato and cook for a couple of minutes, before adding the stock.
  2. When the potato has softened, add the peas and cook for just a couple of minutes.
  3. Add 3/4 of the ham and optional mint, then blend in liquidiser or use a stick blender.
  4. Serve in bowl, sprinkling the remaining ham on top.

If you want to be really healthy and make your own stock.  Go to the search bar and type in bone broth or stock.

Soup will freeze, but you may need to add a drop of water to thin out if too thick.
