Instructions
  1. Heat the oil in a fry pan, over a medium heat. Add the onion slices and fry for about 5 minutes until just softened.
  2. Add the brown sugar and plums and cook to caramelise with the onions for two minutes.
  3. Add the red wine and lime juice, bringing to the boil and simmer to reduce to a thick chutney consistency.
