Instructions
  1. Heat the oil in a large frying pan with a lid (you need a lid for poaching). Cook the leek for 5 - 10 minutes until soften, but not browned. Then add the spring onions and pour in the stock of your choice and simmer for a few minutes until reduced slightly and then add the crème fraîche and dill, then season. Cook for one more minute.
  2. Pour in the peas and nestle in the salmon fillets. Turn down to a simmer and cover. Cook for 12 -15 minutes, depending on the thickness of the fillets, until cooked through.
  3. Sprinkle on the chives and serve with potato or sweet potato mash if you wish.
