Instructions
  1. Heat the oil in a large pan, adding the sliced onions and cook on a medium heat until translucent (do not allow to catch). Then add the potatoes, leeks and carrot and cook for a minute or two, before adding the stock. Simmer gently for about 15-20minutes until all the vegetables are soft.
  2. Serve immediately with a drizzle of crème fraîche (optional) and serve with a slice of fresh bread. For an added crunch or leaving out the bread totally, sprinkle some pumpkin seeds on top instead.
Recipe Notes

Left over soup will be okay in the fridge overnight, otherwise freeze and use when necessary.
