Instructions
  1. Heat the oil in a pressure cooker and fry the chicken thighs until brown. Stir in the white parts of the spring onions with the flour (and stock cubes in not using fresh) until the flour has dissolved. Gradually stir in the water/fresh stock.
  2. Add the potatoes and carrots and bring to a simmer. Close the lid and bring to full pressure on high for 5 minutes. Then slowly release the pressure.
  3. Remove the lid and add the peas and simmer for another 5 minutes. Season and stir in the mustard, green parts of the spring onions and chopped herbs.

This recipe has been adapted to a quick meal (using a pressure cooker).  I use the Instant Pot.
