  1. In a large pan or stock pot, sweat down the onion until softened, then add the garlic cloves and chopped chilli. Cook for several more minutes. If it catches on the bottom of the pan, add a couple of tablespoons of water. Now add the stock and tomato puree.
  2. Add the chunks of vegetables (it will cook quicker and allow the flavours to permeate together, rather than putting the veg in whole. Season well with your choice of herbs and spices.
  3. Allow to simmer for 40 - 50 minutes, until all vegetables are soft. Top up with water during cooking, if necessary, to sit at the level of the vegetables. Using a stick blender or liquidiser, pulse or blend (depending whether you want a thick or smooth consistency).
  4. Serve with croutons or crusty bread.
Recipe Notes

Any leftovers will freeze well.
