Instructions
  1. Cook the quinoa according to packet instructions. Cook more if you wish, as it is very versatile to use leftovers to create another dish. Once cooked, transfer the quinoa to a serving dish or bowl and let it cool.
  2. Pour the olive oil into a large frying pan, over a medium heat. Add the chicken pieces (not to small as they will dry out). Add the roasted or normal garlic cloves, stirring it all around to coat the meat. Sprinkle the smoked paprika and salt. Stir and cook, until the chicken is done (about 8 minutes).
  3. Add the cooked chicken, oranges and avocado to the quinoa. Stir to combine and set aside to cool.
  4. For the dressing; whisk all of the ingredients together. Pour over the salad and toss to coat everything evenly. Serve immediately. Leftovers keep fine in the fridge for 4-5 days. If you're making this in advance, don't add the dressing until the last moment.
Recipe Notes

Vegetarians might consider replacing the chicken for prawns and replacing the orange for mango.  Lovely combo!
