  1. In a food processor or blender, add all the ingredients and blitz until smooth. Hold back some of the tomato juice as it can make the pesto too runny. If it looks too thick, add some additional juice.
  2. Transfer to a bowl to serve and adjust the seasoning if necessary. You can keep this fresh in an airtight container in the fridge for several days.
Recipe Notes

When fresh tomatoes are not in season (UK winter) and imported ones are often bland, an Italian chef suggested that I use Napolina tinned plum tomatoes with more flavour.  So I always use these over fresh out of season.  You will find tinned tomatoes come with quite a bit of juice, so for this recipe, hold some back until you reach the consistency you require.  Pesto is not meant to be runny, but thicker and holding shape.
