  1. Separate egg yolks from egg whites. Mix margarine with eggs yolks, sugar and vodka using an electric whisk. Beat the egg whites until pale and fluffy.
  2. Add 1 tbsp of flour into the fruit and nut mix, as this prevents the mix from sticking together. Add the fruit and nut mix and the beaten egg white into the mixture.
  3. Divide between two loaf tins (greased and lined with grease proof paper) and bake for about 45-50 mins in 170 deg C.
