  1. Put the coriander stems, garlic and chilli into a food processor and pulse until finely chopped. Add the turkey mince and 1 teaspoon of fish sauce and blend again. Roll into meatballs (about 3cm in diameter) and leave in the fridge for 20 minutes to firm up.
  2. Meanwhile, in a saucepan, heat the curry paste with a splash of water. Pour in the coconut milk, stock, lime zest and juice and the remaining fish sauce. Bring to a simmer, add the meatballs and cook for 3 minutes. Add the vegetables (your choice) and cook for 5 minutes more, or until the meatballs are just cooked through. Don't overcook, otherwise the meatballs will be dry and rubbery.
  3. If serving noodles, pre-cook, then warm through, just before serving. Season and pour into two bowl and serve with coriander leaves.

The egg or rice noodles are optional and not included in the nutritional table.

You can use stir fry vegetable pre-prepared, or use up what you have in the fridge.  For mine, I used courgetti, carrots (thinly chopped) and spinach.
