This is a great soup, made in under 20 minutes in ONE pot and only requires the minimum of effort. You can use turkey or chicken for this recipe. I use it for leftover meat and vegetables, usually after a Sunday roast.

Instructions
  1. Bring the stock to the boil and throw in the carrots. Boil for 4 minutes, then add the noodles and red chilli (optional) and simmer for a further 3 minutes.
  2. Stir in the turkey or chicken, peas and the white part of the spring onions, soy sauce (optional) for one minute, or until everything is hot through.
  3. Ladle into bowls, scatter over the green part of the spring onions and and serve.
Recipe Notes

Spice the dish up a bit with sliced red chillies.  You can use vegetable stock instead of chicken stock, but for more flavour, add soy sauce and chillies.
