Tzatziki is a Greek originated sauce served with grilled meats or as a dip. It is made of strained yogurt mixed with cucumbers, garlic, salt, olive oil, sometimes lemon juice, and dill, mint, or parsley and served cold. A perfect accompaniment to the grilled meats & fish of a summer BBQ!

  1. Place the cucumber in a sieve, sprinkle lightly with salt and leave to stand for 30 minutes. Drain very thoroughly and pat dry with absorbent paper.
  2. Mix the cucumber with the yoghurt, mint and plenty of pepper.
