Instructions
  1. Melt the chocolate in a large bowl, over a pan of just simmering water, then take off the heat.
  2. Bring 200ml of the cream to a simmer in a pan. Whisk into the melted chocolate and continue to whisk until cooled.
  3. Whip the remainder of the cream to soft peaks and fold into the mousse.
  4. Divide up the mousse into dishes or ramekins. Cover and chill until ready to serve.
Recipe Notes

Sprinkle some bitter chocolate over the top, or serve with some tart summer berries for that extra touch.  It was also cut through the sweetness.
